(PS-Today is Feb. 11 and I have no idea when I started this post. The sickness had ahold of our house from late October till mid-January, someone was always sick with something! No flu, but it seemed like everything else was just cycling through. No matter how often we cleaned, disinfected, washed everything- I could not stop the germs from advancing! There was a small 4 day window from Omaha to Chicago when we were good, but outside of that, we should have bought stock in kleenex and honey. Fingers crossed we have built up an immunity strength to rival your strongest mythical heroes and we can coast to June!)
Savvy had strep, Cass had an ear infection, and they both had all of the symptoms that come with a cold. It is no surprise I am now home sick today after the last few weeks of tending these two, who occasionally climb into our bed at night and proceed to cough all over, in my face while they try to get comfortable and sleep. ;-)
I somehow made a really good soup! And I never write down recipes or instructions when I stumble upon delicious creativity in the kitchen. Until today! I need to write this down, so I don't forget for next time I really want some soup.
I used a large pan to braise four chicken thighs. I included two garlic cloves that I sliced thin. And then I put salt and pepper in the broth. I added water, maybe halfway up the pan? Once the chicken was done, I pulled all the pieces, but for one. I left that one in and added sage, and rosemary. The other pieces I set aside for chicken tacos later. After maybe 5 minutes I added chopped carrots and celery. Half a carrot and probably one stalk of celery. I took the chicken out, cut it up, and added it back. Then I took a handful of noodles and more water to add. 10 minutes later it was done! I tasted, added a bit more salt, and was good to go! It's light, flavorful, but not too seasoned, and really good!
Additionally, I think I have figured out my own hot toddy. The best hot toddy I had was with friends at a bar in Reno. While my homemade cocktail is nowhere near as good as that one, it is quite delightful!
In my coffee mug I started with two tsp of Tennessee honey whiskey. I added 1 tsp each of apple cider vinegar, lemon juice, and honey. I added two shakes of hot pepper flakes, 1 shake of cinnamon. Then I filled the mug with hot water. I can't recall why each of those ingredients works so well, but I do remember each one has a specific purpose.
